Mandarin Grill Welcomes New Chef With A Four-Hands Collaboration Alongside Gēn

This November 16th to 18th, secure yourself a seat to experience a special four-hands collaboration menu comprising Gēn restaurant’s Johnson Wong and Mandarin Grill’s new chef de cuisine, Rafael Martinez Millan. The east-meets-west collaboration is not a first for Mandarin Grill, yet this one marks a momentous occasion of welcoming Millan while showcasing to loyal guests of the restaurant what he has in store during his tenure.

Millan’s resume is a long one, boasting tenures at various five-star hotels and Michelin-starred restaurants. The Spanish native is known for his unique blend of flavours, artful presentation, and dedication to sourcing the finest ingredients. Chef Wong, on the other hand, needs no introduction. The founder of Gēn根, one of Penang’s most prolific modern Malaysian restaurants has made waves in the industry for their innovative use of local ingredients, elevated to a fine stature.

We got to experience this four-hands collaboration menu ahead of the public opening, and without spoiling the entire menu for you, here are some standout dishes that might entice you to try it out for yourself. An interesting one is the Belcheri Oyster starter, which comes swimming in mussel broth topped with thinly sliced mountain yam, the latter adding an earthy flavour with a slippery mouthfeel to the dish. Millan’s European roots shine through with the Cannolo amuse bouche made with filo pastry that comes filled with a combination of strawberries and anchovies, as well as the beef paella with red wine sauce. The former was an interesting savoury take on what is typically a dessert, while the beef paella is a hearty addition to the tasting menu. For desserts, Wong taps into the Malay roots with the Josephine Pineapple, the sweetest variant of pineapples in Malaysia and combines it with spicy soy sauce for a savoury, spicy-sweet dessert.
